I'm going back........the full update!

So some of you may have seen my post yesterday about re-joining Slimming World. Thank you all of you for all your lovely messages and wishes of support!

So here is the full facts of the matter:-

Starting Weight - 11st 3.5lbs Jan 2011
Target Weight  - 9st 10.5lbs Oct 2011

Total Loss - 1st 7lbs

Last weigh in weight - 10st 0lb - April 2012
Last nights weigh in - 10st 1lb - May 2012

Total gain - 5.5lbs

So overall not as bad as I was expecting! I was welcomed back with open arms and everyone was as lovely as if I'd been there the week before!

However psychologically I haven't been in the right place to get back on track. I had a good long chat with my consultant who feels this is because that really 9st 10.5lb is not where I want to be. I've always wanted to be at the bottom of my target 'range' which is 9st 7.5lb, but I get back to 9st 10.5lb and it all goes wrong, as my head tells me I don't need to bother trying anymore. We are going to work at this in stages - first is to get 1.5lb off and get back into my target range again.

Today has been 'ok' not great, eating wise. Breakfast was fine, but I had no lunch as I just didn't have time with the way things were at work today, but I did end up having a single finger timeout - oh dear! I haven't even worked out the syns yet.

However my tea was super super good :D So i thought I would share the picture and the recipe with you all. It may inspire you to join me!

Diet Coke Chicken

yes you read it right DIET COKE!!

This may sound bizarre but honestly it tasts great! My OH is very fussy with food and turned his nose up until he tasted it!

This recipe is free on SLimming World - I'm sorry I don't know ProPoints!

Serves 2 - with a little left over for lunch

1 onion, roughly chopped
2 chicken breasts, diced1 red pepper, thinly slices
1 can (300ml) diet coke/pepsi max/diet rolla cola
6 tbsp passata
1 tsp chinese 5 spice

1. In frylight over a medium heat fry off the onion and the chicken until lightly browned

2. Add the can of diet coke, passata,  and chinese 5 spice, bring to the boil.

3. Turn down heat and reduced to a simmer with the lid off until the liquid has reduced to a thick sticky bbq style sauce - this will seem to take ages to happen them all of a sudden it will just go really thick so keep your eye on it!

Serve with rice and salad

    I told you previously im cutting out gluten and its so hard!! ive replaced most my foods with fruit! booo
