Guest Blogger - Sunday Sweetness! Citrus Fresh

You may remember that I was looking for guest bloggers to look after you all and keep you entertained whilst I'm away. Well here's the first of my guest blogger posts, look out for some more over the next week or so!


Hi, I'm Amanda from Tatty Tulip where I love sharing my passion for fashion and beauty and sharing the odd moments where I like to bake and think I'm the next Nigella Lawson.

In typically British fashion we are all still waiting for summer to reveal its shiny head, so in the meantime I have been filling many afternoons with an awful lot of baking. Most recently I've come across a brilliantly summer recipe of white chocolate and lemon cookies that I thought I would share with you all.

Recipe:
110g unsalted butter
100g caster sugar
55g soft brown sugar
pinch of salt
zest of one lemon
1 teaspoon of lemon extract/juice
1 large egg
170g plain flour
half a teaspoon of bicarbonate of soda
200g white chocolate

How to:
1. Preheat the oven to 190c (fan assisted 170c) and line a baking sheet with baking parchment
2. Cream together the butter, caster sugar, soft brown sugar and salt until the mixture looks fluffy
3. Beat in the lemon zest and lemon juice. Make sure you have a sneaky taste of the mixture and add more lemon to suit your taste


4. Beat the egg into the mixture
5. Sift in the bicarbonate of soda and flour into the cream mixture
6. Mix the chocolate chunks into the mixture.

Now you're ready to bake!
Drop well spaced heaps of the mixture onto the baking tray. I would suggest a good teaspoon full of the mixture for each cookie.

Bake the cookies for 8-10 minutes but remember to keep an eagle eye on them and pull them out once they start to brown around the edges. Leave these to cool on the tray for a few minutes and then transfer to a cooling rack. These cookies are SO moreish - with the gooey goodness of the chocolate and the zesty lemon you will be left wanting more and more.


My taste tester was my six year-old step daughter and I have to say they went down a treat! She spent the whole day trying to sneak off to the kitchen to steal another cookie. I hope you all enjoy this recipe, let me know if you give it a go.
